This hybrid animal genetically contains 3/8 Bison and 5/8 Cow. The result is a remarkable product known as the miracle protein. Beefalo has lower fat and cholesterol levels than any other bovine bred in the US. It has the leanness of bison but enough flavor from the beef genetics to avoid the gamey flavor you tend to taste in Bison. It also cooks in 30% less time than traditional beef!
