~🎃For International Pumpkin Day we’re sharing a step-by-step guide of our fav 15-minute fall recipe!~

Imagine this: your favorite home-cooked creamy Bacon Carbonara Pasta. It’s simple, savory and of course, loaded with mouthwatering, crispy bacon.

We already know you love it! Classics are classics for a reason. They stand the test of time, have bold flavor profiles and bring a certain sense of nostalgia to our plate. In honor of International Pumpkin Day we’re guiding you in taking an old reliable recipe that everyone loves, and adding a savory fall twist. And best of all, this dish can be on your table in only 15 minutes! (We know, we’ve tried it ourselves!)

Presenting our cozy Pumpkin Bacon Carbonara Pasta! Loaded with flavor and fresh Heartland ingredients bringing a luxurious flavor palate to your table in 15 minutes or less! Trust us you’ll want seconds of this hearty autumn comfort food!

Our 15 Min Bacon Carbonara with Creamy Pumpkin Sauce:

Ingredients:

  • 1 cup of pumpkin puree (Or score some fresh pumpkin by scraping out your small Jack O’ Lanterns for the Heartland Pumpkin Carving Contest!)
  • 1 pound of pasta
  • 4 egg yolks
  • 1 cup of shredded parmesan 
  • 8 slices of bacon chopped
  • Optional: ⅛ teaspoon of rubbed sage (for a bit of fall spice!)

Instructions:

  1. While pasta water boils, combine pumpkin puree, egg yolks, and half of parmesan cheese. Add salt and pepper to taste. Whisk together.
  2. Sizzle up your All-Natural Heartland bacon and reserve a few tablespoons of bacon fat. Set aside.
  3. When pasta reaches al dente take off of heat and drain, reserving ½ cup of pasta water. Immediately take the hot pasta water and whisk quickly into your pumpkin mixture to temper the eggs.
  4.  Add your sauce to the pot of drained pasta, stirring until fully coated and sauce is creamy and thick. Use more splashes of water as needed. Add the reserved bacon fat for a burst of flavor!
  5. Quickly chop up your bacon into desired size and top off the pasta, working in the bits throughout. Top with rest of parmesan, the sage (If desired),and other seasonings as desired.
